MAIN RESPONSIBILITIES:
Under the supervision of the Executive Chef and their team, the Kitchen Intern participates in the preparation of dishes while respecting hygiene standards, food safety regulations, and the establishment’s quality standards.
They will gain an understanding of the organization of a professional brigade, the different areas of the kitchen, and basic culinary techniques.
SPECIFIC TASKS:
• Mise en place:
Assist in the preparation of products: peeling, cutting, weighing, and basic cooking;
Prepare ingredients according to recipes and the instructions of the brigade;
Ensure the cleanliness and organization of their workstation before, during, and after service.
• Culinary Production:
Collaborate in the preparation of starters, hot dishes, sides, and desserts according to assigned areas (cold kitchen, hot kitchen, pastry, etc.);
Assist with plating, respecting presentation standards and portion sizes;
Adhere to service timelines in coordination with the brigade.
• Hygiene & Safety:
Strictly apply HACCP rules: personal hygiene, equipment cleaning, traceability, food storage;
Participate in the daily cleaning of kitchen areas, utensils, and equipment.
• Brigade Life:
Work collaboratively with other members of the kitchen team;
Participate in service briefings and key moments during service;
Be observant and eager to learn about all techniques, products, and positions within the kitchen.
• Human Resources:
Establish and maintain an open and efficient working relationship with all team members;
Ensure completion of mandatory internal training and Marriott International virtual courses;
Ensure consistent application of hotel and/or group standards and procedures;
